I scrapbooked all of the recipes that I love--family favorites, recipes passed down from friends, tried and true recipes, and quick and easy recipes. I made a set for me, a set for both Bryan and Sheridan that I will give them later, and a set for Stephanie that I gave her for Christmas.
I think they turned out really nice! I love looking at them in my recipe book!
Here is one of the recipes that I REALLY love (I got it from Tina who got it from Nathell):
Mexican Soup
3-4 chicken breast; uncooked
1/2 cup salsa
4 oz green chilies; chopped and drained
3 TBLS butter
2 chicken boullion cubes dissolved in one cup hot water
1/2 to 1 tea ground cumin
18 oz can crushed or chopped tomato
Mix together and cook on high in a slow cooker for 4 hours.
30 minutes before serving:
Shred chicken
add 2 cups half and half (I used fat free)
2 cups Monterey Jack Cheese (I use fat free)
1 can cream corn
Can be served with tortilla chips and sour cream.
And when you get ready to make this Delish soup try wearing one of these to keep you splatter free!
Enjoy!
